AI you control, open source and self-hosted

How can organisations adopt AI without giving up control of their data, infrastructure, and technology choices? Drawing on Eau de Web's work for European Commission and the United Nations, this talk presents an open-source, self-hosted approach to AI assistants and RAG, together with the governance and safety measures needed to run them responsibly.
